Easy baked cheesecake with berries

Ingredients

  • 1 package cream cheese about ½ lb or 250 g
  • 1 cup berries fresh or frozen
  • 1 cup semi sweet crackers, digestive biscuits about 110-115g
  • ¼ cup sugar
  • 3 tbsp butter, melted
  • 2 eggs
  • ¼ tsp vanilla extract

Instructions

  • Preheat the oven to 180 C / 350 F.
  • Line a 7" diameter round baking dish with parchment paper (see the trick here, how to cut the perfect paper size)
  • Crush the crackers, add the melted butter, and mix it well with a spatula. Pour the crumb butter mix into the pan, and tap it evenly in the bottom with wet hands or with the bottom of a measuring cup.
  • Pour half amount of the fruits on top of the crust
  • In a mixing bowl mix the cream cheese, eggs, sugar and vanilla with a stand or handheld mixer.
  • Pour the batter on the crust.
  • Bake it for about 30-35 minutes, or until the top gets a pretty golden colour.
  • Let it cool down completely, and serve it with the rest of the berries on top or on the side.
