1cupsemi sweet crackers, digestive biscuits about 110-115g
¼cupsugar
3tbspbutter, melted
2eggs
¼tspvanilla extract
Instructions
Preheat the oven to 180 C / 350 F.
Line a 7" diameter round baking dish with parchment paper (see the trick here, how to cut the perfect paper size)
Crush the crackers, add the melted butter, and mix it well with a spatula. Pour the crumb butter mix into the pan, and tap it evenly in the bottom with wet hands or with the bottom of a measuring cup.
Pour half amount of the fruits on top of the crust
In a mixing bowl mix the cream cheese, eggs, sugar and vanilla with a stand or handheld mixer.
Pour the batter on the crust.
Bake it for about 30-35 minutes, or until the top gets a pretty golden colour.
Let it cool down completely, and serve it with the rest of the berries on top or on the side.
