Easy baked cheesecake with berries

If you are looking for a last-minute awesome dessert recipe, do not search any further! This easy and fast-to-make baked cheesecake with berries is one you will definitely love. A few simple ingredients, a couple of minutes to prepare, and in less than an hour you will have a delicious and so “pretty” dessert to serve.

In case you don’t have fresh berries, no problem, I often use some frozen ones, or skip them entirely. For the crust feel free to use any kind of semi-sweet crackers, like Graham crackers, some cookies like Maria cookies or digestive biscuits (see here for some more cookie crust alternatives). An unopened package of cream cheese should keep in the fridge for three to four weeks (see more details here), so you can always have one on hand for those last-minute emergencies, like ” what is for dessert?!” or “what should we serve to our guests, we have no time at all?!”.

Easy baked cheesecake with berries

Ingredients

1 package cream cheese,  about ½ lb or 250 g

1 cup berries,  fresh or frozen

1 cup semi sweet crackers or digestive biscuits,  about 110-115g

¼ cup sugar

3 tbsp butter, melted

2 eggs

¼ tsp vanilla extract

Instructions

Preheat the oven to 180 °C / 350 F.

Line a 7″ diameter round baking dish with parchment paper (see the trick here, how to cut the perfect parchment paper size)

Crush the crackers, add the melted butter, and mix it well with a spatula. Pour the crumb butter mix into the pan, and tap it evenly in the bottom with wet hands or with the bottom of a measuring cup.

Pour half amount of the fruits on top of the crust

In a mixing bowl mix the cream cheese, eggs, sugar and vanilla with a stand or handheld mixer.

Pour the batter on the crust.

Bake it for about 30-35 minutes, or until the top gets a pretty golden colour.

Let it cool down completely, and serve it with the rest of the berries on top or on the side.
